Food Recipes : Kalasan Fried Chicken -- Kalasan Fried Chicken, or Ayam Goreng Kalasan, is a fried chicken dish with special seasoning from Kalasan, Sleman Yogyakarta. 

Ingredients:
1 chicken
1 stalk lemongrass, crushed
2 bay leaves
3 tbsp lemon juice
1 liter of coconut water
Cooking oil for frying

Seasoning:
7 pieces of red onion
6 pecan
4 cloves garlic
1 tsp brown sugar, sliced
3 cm turmeric
1 tbsp roasted coriander
salt sufficiently

Sambal:
5 pieces of red onion
1 teaspoon brown sugar
1 tomato
7 pieces of red chili
1 teaspoon fried shrimp paste
Salt sufficiently

How To Make
  1. Clean the chicken and apply it with lemon juice evenly. Then sprinkle it with salt and let stand for about 15 minutes to removed the fishy smell.
  2. After fifteen minutes, please mix the spices, bay leaves, lemon grass and coconut water in the container. Stir the ingredients evenly.
  3. Then pour in a skillet and put the chicken into it. Cook the chicken until tender and reduced the water from chicken sauce. The chicken turns to be more tender evenly.
  4. Once it’s softened, turn off the stove and set aside temporarily.
  5. While waiting, please turn on the stove and heat a new pan, pour the cooking oil into it and wait until the heat oil evenly.
  6. After that, fried chicken until cooked and brownish color. Raise the chicken when it is ripe and drain the oil.
  7. Once cooked, serve this dish in a container and enjoy.
