Food Recipes : Ayam Rica-Rica -- Ayam Rica-Rica (Chicken Rica-Rica), is a spicy cuisine from Manado, North Sulawesi. Chickens are the most popular to make rica, but almost all types of meat, poultry, fresh water fish, and seafood can be processed into delicious rica-rica.

Ingredients: 
1 chicken, wash and cut into 8 parts
1 teaspoon lime juice
1 ¾ tsp salt
½ tsp sugar,
4 pieces of orange leaves, wash and then remove the bone leaves
2 lemongrass stalks, wash and then spread to keep the aroma out
300 ml of water
Cooking oil or vegetable oil to taste for sautéing

Rica-Rica Seasonings:
6 pieces of red chilli, discard the stem
1 tomato, wash
8 cloves of red onion
3 cloves of garlic
2 cm medium ginger, peeled the outside skin

How To Make:
  1. First, sprinkle chicken meat that has been cut with a mixture of 1 tsp salt and lime juice until evenly distributed. Then, let stand for about 15 minutes until soaked, set aside.
  2. Roughly mash all ingredients for the seasoning of rica-rica. Prepare the frying pan and heat the oil and saute the seasoning that has been crushed roughly until fragrant. Add the orange and lemongrass leaves, then stir again.
  3. Enter the chicken meat that has been prepared earlier into the stir, stir until the color changes and marinade absorbed. Next, pour the remaining salt and sugar and then stir until evenly distributed. Pour water and let until the marinade seeps. Stir occasionally for maximum absorption and then lift.
